Barn Dance BBQ Baby Back Ribs
Step 1: 24 hours prior to smoking, remove the membrane from the back of the ribs and trim any loose pieces of meat
Step 2: Using the binder of your choice ( we use cheap yellow mustard) cover the Ribs front and back with a healthy coating to cover all surfaces.
Step 3: Sprinkle Barn Dance BBQ original rub generously over all surfaces of the ribs patting the coating in to help adhere to the binder.
Step 4: Wrap Ribs in plastic wrap and put in refrigerator overnight.

Step 5: Preheat smoker to 225 degrees (F). We use a Yoder Pellet smoker loaded with Bear Mountain Pellets ( Fruitwood Blend)
Step 6: Unwrap your ribs and spritz the surface with a 50/50 mix of apple cider vinegar and apple juice.
Step 7: About 5 and half hours prior to eating place ribs on grates and close lid.
Step 8: Every 1 hour open lid and spritz the ribs with the 50 /50 mix
Step 9: At about the 4 to 4 and half hours you should see the ribs pull back on the bone and the bark should be firm. At this point if you choose to sauce this is when you will sauce your ribs. I prefer my ribs dry and add a little at the table.
Step 10: At the 5 hour mark the Ribs are Done remove and let rest 10 minutes before serving.
